Vegan/Vegetarian Broth Recipe
Remove the top and bottom of each onion and cut it into 6 wedges.
Cut carrot into two-inch logs.
Cut whole garlic into half.
Cut 3-4 thick slices of ginger.
Mix ginger, onion, carrot, garlic, green parts of scallion, one sheet of kombu (about four by six inch) in an 8 quart pot.
Bring those ingredients to a boil then turn to simmer for 45-60 minutes.
Strain all vegetables. Squeeze the vegetable with a tong to get extra juice.
