June is all about love, inclusion, and expressing your true colors — and what better way to celebrate Pride than by making Rainbow Ramen from scratch at home? This recipe brings the rainbow into your bowl, combining the joy of noodle-making with the spirit of Pride.
Whether you’re honoring the LGBTQ+ community, planning a colorful dinner party, or just want to try something creative in the kitchen, rainbow ramen is a festive, fun, and flavorful way to show your support.
What You’ll Need
Before we get into the steps, grab a set of food-safe gel colors like the one I used:
Ingredients (for two servings of noodle dough):
180 grams of bread flour
65 grams of water
6 grams lye water
2 grams of salt
Food coloring (red, orange, yellow, green, blue, purple)
Step-by-Step: How to Make Rainbow Ramen
1. Mix the Dough
In a large mixing bowl, combine 180g bread flour, 65g water, 6g lye water, and 2g salt. Stir everything together with a pair of chopsticks until the texture resembles shredded chicken (yep, that's your visual cue).
2. Form the Dough
Squeeze the shaggy mix into a single dough ball with your hands. Transfer it to a large cutting board.
⚠️ Important Tip: Avoid using your kitchen counter — the food coloring might stain it!
3. Divide and Color
Separate the dough into six equal pieces. Flatten each one slightly and add a different food color to each: red, orange, yellow, green, blue, and purple. Fold each piece in half to distribute the color, then flatten again. Repeat until evenly colored.
4. Roll and Fold
Run each colored dough through your pasta roller 12–15 times, folding in half each time.
🧽 Between each color, clean the roller and your hands with paper towels to prevent color mixing.
5. Thin It Out
After the dough is smooth and pliable, roll each one to setting 4 on your pasta roller.
6. Cut Into Noodles
Use a spaghetti cutter to slice the dough into long, beautiful ribbons.

7. Boil
Cook each batch of noodles separately in boiling water for 90 seconds. Drain and set aside.
8. Assemble Your Bowl
For the broth, I used a simple shio tare (or you can buy shio koji here as a substitute) base with hondashi (buy here) — it’s light and lets the rainbow noodles shine. Serve in a white bowl to make the colors pop.
9. Keep Toppings Simple
Let the noodles be the star. I went with a soft-boiled egg and a single slice of chashu. That’s all you need.
