
If you love instant ramen but want to avoid excessive sodium, MSG, and artificial chemicals, this homemade ramen seasoning powder is a game-changer.
Many store-bought ramen seasoning packets contain ingredients such as: Maltodextrin, Monosodium Glutamate, Hydrolyzed Soy Protein, Caramel Color, Natural Shrimp & Lobster Flavors, Disodium Guanylate, Disodium Inosinate, Citric Acid, Silicon Dioxide (Anti-Caking Agent). That’s a long list of additives! Instead, let’s make a clean, umami-packed DIY ramen seasoning mix that’s healthier, preservative-free, and just as flavorful!
DIY Ramen Seasoning Powder Recipe
Ingredients:
2x2" kombu sheet
2-3 slices dried shiitake mushroom
6-8 dried shrimp

3 tsp soy sauce powder (Buy from Amazon here: https://amzn.to/43H3j6y)
2 tsp onion powder (Buy from Amazon here: https://amzn.to/41Q4ZJL)
2 tsp garlic powder (Buy from Amazon here: https://amzn.to/3QWZXF3)
1 tsp ginger powder (Buy from Amazon here: https://amzn.to/43H3j6y)
1 tsp fine sea salt or kosher salt
1 tsp granulated sugar
Instructions:
Place the kombu, dried shiitake, dried shrimp, and freeze-dried scallions in a spice grinder. Blend for about 1 minute until finely ground.
In a container, combine the ground mixture with soy sauce powder, onion powder, garlic powder, ginger powder, sea salt, and sugar.
Close the container and shake for 1 minute to mix everything evenly.
And that’s it! You now have a natural, MSG-free ramen seasoning powder ready to use.
How to Use This Seasoning in Instant Ramen

To test this seasoning, I replaced the flavor packet from a Maruchan Ramen Shrimp Flavor with my homemade mix. Here’s how I did it (which is the same as the instructions on the package):
Boil 2 cups of water in a pot.
Add dry noodles and cook for 3 minutes.
Turn off the heat and stir in ½ of my homemade seasoning mix (since this recipe makes enough for two servings).
Stir until fully dissolved, then enjoy!
The result? Same rich umami flavor, but without MSG or preservatives!
